Tasting Notes

Every year our winemaker creates a unique blend that is predominantly Cabernet Sauvignon blended with other Bordeaux varietals, designed to be a softer, easy drinking Cabernet that doesn’t require aging. This wine is fragrant, with aromas of violet, sugar plum, and earl grey tea. The palate boasts a full mouthfeel with notes of huckleberry and vanilla chai, finishing with notes of black cherry and supple tannins. This wine pairs well with cured meats, so try this with your next charcuterie board. This also a go-to wine to pair with dinner, such as hamburgers with caramelized onions, sauteed mushrooms, and aged cheddar or veal marsala. For a more fruit-forward and tannic wine, drink now, or age up to 15 years for a softer, earthier wine.
